- 1 lb Raw Shrimp (tails off & deveined)
- 1 lb Beef Sirloin Steak Tips (cut in cubes)
Marinade & Seasoning
- 2 Tbsp Extra Virgin Olive Oil
- 1 tsp Salt
- 1 tsp Black Pepper
Garlic & Herb Ghee
- 1/2 cup Ghee
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 3 cloves Garlic (minced fine)
- 1 Tbsp Lemon Juice
- 4 – 6 Fresh Basil Leaves (chopped)
- 2 Tbsp Flat Leaf Parsley (chopped)
- 1 Tbsp Fresh Oregano (chopped)
Instructions
- Prepare Garlic & Herb Ghee: Melt the ghee in a small pan over medium heat. Add the minced garlic and stir for about one minute, just until fragrant. Remove the pan from heat.
- Mix Herb Ingredients: Stir in salt, black pepper, lemon juice, fresh basil, parsley, and oregano into the warm ghee mixture. Set aside to let the flavors meld.
- Marinate Shrimp and Steak: In a separate bowl, combine the raw shrimp and beef sirloin cubes with extra virgin olive oil, salt, and black pepper. Mix well to evenly coat the protein.
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the shrimp and steak alternately onto the skewers.
- Grill the Kabobs: Preheat the grill to medium-high heat. Place the skewers on the grill and cook, turning every 2 minutes, for a total of 6 to 8 minutes depending on steak doneness preference. For medium rare steak, grill for about 6 minutes.
- Finish and Serve: Remove the kabobs from the grill and place them on a serving plate. Brush generously with the prepared garlic and herb ghee sauce. Reserve any extra sauce for dipping.
