Description

Delight in these Pumpkin French Toast Sticks, a perfect fall-inspired breakfast treat. Made with thick slices of French bread soaked in a rich pumpkin-spiced custard and cooked to golden perfection, these sticks are rolled in cinnamon sugar and served warm for a cozy, flavorful start to your day.

Ingredients

Bread

  • 1 loaf French bread or brioche, cut into 1-inch thick slices, then each slice into thirds

Custard Mixture

  • 4 large eggs
  • 2/3 cup milk
  • 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice

Cinnamon Sugar

  • 1/4 cup sugar
  • 1 1/2 tsp ground cinnamon

Other

  • Butter for cooking
  • Maple syrup or buttered pecan syrup for serving (optional)

Instructions

  1. Prepare skillet and butter: Set a large non-stick skillet over medium heat and add a small amount of butter. Allow the butter to melt completely to coat the pan for cooking.
  2. Mix custard ingredients: In a small rectangular baking dish, whisk together the eggs, milk, pumpkin puree, vanilla extract, 1 teaspoon cinnamon, and pumpkin pie spice until well combined.
  3. Dip bread and cook: Dip each piece of bread into the pumpkin custard mixture, making sure to coat both sides. Place the soaked bread onto the hot skillet and cook until golden brown on one side, about 2 minutes. Flip and cook the other side for an additional 2 minutes until golden and cooked through.
  4. Prepare cinnamon sugar: While the bread cooks, combine the 1/4 cup sugar and 1 1/2 teaspoons cinnamon in a small rectangular baking dish and set aside.
  5. Coat cooked French toast sticks: Remove the cooked French toast sticks from the skillet and immediately roll them in the cinnamon sugar mixture, ensuring they’re evenly coated.
  6. Serve: Serve the pumpkin French toast sticks hot, accompanied with maple syrup or buttered pecan syrup if desired for added sweetness and flavor.

Notes

  • Use brioche or French bread for the best texture and flavor.
  • To keep the sticks warm while cooking batches, place them on a baking rack in a low oven (around 200°F/95°C).
  • For a dairy-free version, substitute milk with almond or oat milk and use a plant-based butter.
  • Pumpkin pie spice can be substituted with a mix of ground cinnamon, nutmeg, and ground cloves if unavailable.
  • Serve immediately for the best texture; the sticks may lose crispness if left too long.
