Nanaimo Bars are a classic Canadian no-bake dessert featuring three decadent layers: a rich cocoa and almond crumb base, a creamy custard-flavored butter layer, and a smooth dark chocolate topping. Ingredients
Base Layer
- 1/2 cup butter
- 1/4 cup sugar
- 5 tablespoons cocoa powder
- 1 large egg (beaten)
- 1 3/4 cups graham cracker crumbs
- 1 cup shredded coconut
- 1/2 cup roasted almonds (finely chopped)
Custard Middle Layer
- 1/2 cup softened butter
- 3 tablespoons cream
- 2 tablespoons custard powder
- 2 cups icing sugar
Chocolate Topping
- 2/3 cup dark chocolate chips (or semi-sweet)
- 2 tablespoons softened butter
Instructions
- Prepare Baking Dish: Line an 8-inch square baking dish with parchment paper on the bottom to prevent sticking and ensure easy removal of the bars.
- Make the Base Mixture: In a double boiler, melt the butter, sugar, and cocoa powder together. Gradually add the beaten egg, whisking continuously for 2 minutes until the mixture thickens and the egg is fully cooked, creating a smooth chocolate base.
- Combine Dry Ingredients & Press: Remove the base mixture from heat, then stir in the graham cracker crumbs, shredded coconut, and finely chopped roasted almonds. Press this mixture evenly into the prepared baking dish to form the bottom layer of the bars.
- Whip the Custard Filling: Using a stand mixer with the whisk attachment or a hand mixer, beat the softened butter, cream, custard powder, and icing sugar together for about 3 minutes until the mixture is soft, fluffy, and pale in color.
- Assemble the Middle Layer: Pour the custard filling over the base layer in the baking dish. Use a rubber spatula to spread it gently and evenly. Refrigerate the dish for 30 minutes to allow this layer to firm up.
- Melt Chocolate Topping: Melt the dark chocolate chips and butter together either in the microwave or over a double boiler. Let the mixture cool for about 5 minutes to thicken slightly, then spread it evenly over the chilled custard layer as the final chocolate topping.
- Chill and Set: Place the assembled dessert in the fridge again and chill until the chocolate topping is fully set and firm.
- Serve: To remove the bars, carefully run a knife around the edges of the baking dish. Invert the dish onto a cutting board to release the entire block, then cut into 8 equal servings and enjoy.

- Roast raw almonds in an air fryer at 400°F for 5 minutes for enhanced flavor and crunch.
