Description

These Lunch Lady Brownies are a nostalgic treat featuring a rich, fudgy brownie base topped with a smooth, chocolate frosting and colorful rainbow sprinkles. Made with a combination of melted butter and vegetable oil for extra moistness, these brownies bake up perfectly soft and chewy with a glossy, bouncy center. The chocolate frosting is whipped up right after baking ensuring it melts slightly into the brownies for an irresistible finish.

Ingredients

Brownie Batter

  • 1 cup (220g) unsalted butter, melted
  • 2 tbsp vegetable oil
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 tsp salt
  • 2 cups (265g) all purpose flour
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) dark brown sugar, packed
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract

Chocolate Frosting

  • 1/4 cup (55g) unsalted butter, softened
  • Pinch of salt
  • 1/4 cup (25g) unsweetened cocoa powder
  • 2 1/2 cups (270g) powdered sugar
  • 1/4 cup (55g) milk
  • 1 tsp vanilla extract
  • Rainbow sprinkles, for topping

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan or a 9×13-inch baking pan to prevent sticking.
  2. Mix wet ingredients with cocoa: In a large bowl, whisk together the melted butter, vegetable oil, and unsweetened cocoa powder until well combined and smooth.
  3. Add dry ingredients and sugars: Stir in the salt, all-purpose flour, granulated sugar, and packed dark brown sugar until all ingredients are evenly incorporated into the batter.
  4. Incorporate eggs and vanilla: Whisk in the eggs, one at a time, and then add the vanilla extract, mixing until the batter is smooth and uniform.
  5. Pour and spread batter: Pour the brownie batter into the prepared pan and spread it out evenly, ensuring the surface is level.
  6. Bake the brownies: Bake in the preheated oven; if using the jelly roll pan, bake for 15-20 minutes, or if using the 9×13-inch pan, bake for 25-30 minutes. The brownies are done when the surface looks matte and bubbly and the center feels bouncy to the touch.
  7. Prepare the frosting: Immediately after removing the brownies from the oven, prepare the frosting by mixing the softened butter, a pinch of salt, and cocoa powder in a bowl using a hand mixer or stand mixer with a paddle attachment.
  8. Add powdered sugar and liquids: Gradually mix in the powdered sugar, one cup at a time, then add the milk and vanilla extract. Continue mixing until the frosting is smooth and creamy.
  9. Frost and decorate: Spread the chocolate frosting evenly over the warm brownies. Sprinkle rainbow sprinkles on top to add a festive touch.
  10. Cool and serve: Allow the brownies to cool completely before slicing them into pieces and serving to enjoy the classic lunch lady-inspired treat.

Notes

  • Use room temperature eggs to ensure better incorporation and a smoother batter.
  • For a richer chocolate flavor, use a high-quality unsweetened cocoa powder.
  • Make sure not to overbake the brownies; the center should still be soft and bouncy for the best fudgy texture.
  • Once frosted, cool completely to help the frosting set well and prevent it from sliding off when slicing.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
