Description

This crustless pumpkin pie is a simple, gluten-free dessert that captures the rich flavors of pumpkin and warming spices without the fuss of a crust. It’s quick to mix and bakes into a soft, custardy treat that firms up beautifully after chilling, making it an ideal wholesome dessert for fall and holiday seasons.

Ingredients

Main Ingredients

  • 1 can pumpkin puree (15 oz)
  • 1 cup milk (of choice)
  • 2 1/2 tsp pure vanilla extract
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/3 cup flour (such as spelt, oat, white, sorghum, or almond)
  • 1/2 cup sugar (or unrefined sugar or granulated erythritol)
  • 1 tbsp flaxmeal (or 2 tsp cornstarch, can be omitted if serving pie in a bowl)
  • Optional: 2 tbsp oil or almond butter for richness

Instructions

  1. Preheat the oven: Set your oven to 400°F (205°C) and grease a 9 or 10-inch round baking pan to prevent sticking.
  2. Prepare the batter: In a large mixing bowl, thoroughly whisk together the pumpkin puree, milk, vanilla extract, cinnamon, baking powder, pumpkin pie spice, salt, flour, sugar, and flaxmeal (or cornstarch if using).
  3. Optional richness: For a richer texture, stir in 2 tablespoons of oil or almond butter until fully incorporated.
  4. Bake the pie: Pour the batter into the prepared pan and bake for 35 minutes. The pie will remain slightly gooey when done.
  5. Cool and chill: Allow the pie to cool completely at room temperature. Once cooled, place it uncovered in the fridge for at least 6 hours to set and firm up before slicing and serving.

Notes

  • Using flaxmeal instead of cornstarch adds fiber and helps bind the pie.
  • The pie is naturally gluten-free if using gluten-free flour options like oat or almond flour.
  • Chilling is important for firm slices; without chilling, the texture will be soft and custardy.
  • Sweetener can be adjusted to taste, including using erythritol for a low-carb option.
  • Oil or almond butter is optional but gives a creamier, richer mouthfeel.
