Ingredients

Chicken and Seasonings

  • 2 tbsp olive oil (Costabile Brand)
  • 1 1/2 lb Springer Mountain Farms chicken breast
  • 1 1/2 tsp paprika (OliveNation)
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder (OliveNation)
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Pasta

  • 12 oz gluten free farfalle pasta

Sauce

  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1/4 cup pasta water (reserved)
  • 1/2 tsp salt
  • 1 tsp garlic powder


Instructions

  1. Boil Pasta: In a large pot, bring water to a boil and cook the gluten-free farfalle pasta according to package directions until al dente. Reserve 1/4 cup of pasta cooking water before draining.
  2. Mix Chicken Seasonings: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper. Mix thoroughly to create the seasoning blend for the chicken.
  3. Prepare Chicken: Pound the chicken breasts to slightly thin them out for even cooking, then season both sides thoroughly with the prepared seasoning mixture.
  4. Sear Chicken: Heat olive oil in a large skillet over medium heat. Once hot, place the seasoned chicken breasts in the skillet and sear for 5 minutes on each side until both sides develop a golden crust.
  5. Cook Chicken Through: After searing, reduce heat to medium-low, cover the skillet with a lid, and cook the chicken for an additional 10-12 minutes. Confirm the internal temperature reaches 165°F before removing it to a cutting board to rest.
  6. Make Sauce Base: In the same skillet, melt butter over medium heat. Once melted, add dry shallots, garlic powder, and Italian seasoning. Stir and simmer for about one minute to release aromatics.
  7. Thicken Sauce: Sprinkle gluten-free flour over the butter and seasonings, stirring well and scraping the pan’s bottom to combine and cook out the raw flour taste.
  8. Add Liquids: Gradually pour in chicken broth and heavy cream, whisking continuously until the sauce becomes smooth and creamy.
  9. Incorporate Cheese: Stir in the shredded Parmesan cheese until fully melted and the sauce thickens to your desired consistency. Adjust seasoning with salt as needed.
  10. Toss Pasta and Sauce: Add the cooked pasta to the sauce and toss well to coat evenly. Use reserved pasta water one tablespoon at a time to thin out the sauce if necessary.
  11. Slice and Add Chicken: Slice the rested chicken breasts and gently fold them into the pasta and sauce mixture.
  12. Serve: Carefully stir to combine all components and serve immediately for a warm, comforting meal.
