Description

Delicious and easy-to-make Chicken Parmesan Rolls featuring tender grilled chicken, tangy marinara sauce, and melted mozzarella cheese wrapped in a soft, homemade yogurt-based dough. Perfect as a hearty appetizer or main dish, these rolls bake to a golden finish with a crunchy sesame seed topping.

Ingredients

Dough

  • 1 cup all purpose or white whole wheat flour (plus more for dusting) (5 oz)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup Stonyfield non-fat Greek yogurt (not regular, drained if there’s any liquid)

Filling and Topping

  • 8 ounces grilled chicken breast, sliced (about 2 cups)
  • 1/2 cup marinara sauce (plus 1 tablespoon more for layering)
  • 3/4 cup shredded part-skim mozzarella cheese
  • 1 large egg (for egg wash)
  • Sesame seeds, for sprinkling

Instructions

  1. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and kosher salt until evenly combined.
  2. Add yogurt and mix: Add the non-fat Greek yogurt to the dry ingredients and mix using a fork or spatula until it forms small crumbles.
  3. Knead the dough: Lightly dust a work surface with flour, transfer the dough to it, and knead about 20 times until smooth and tacky but not sticky, ensuring no dough sticks to your hand.
  4. Preheat oven and prepare pan: Preheat the oven to 425°F (220°C) and line a sheet pan with a silicone baking mat.
  5. Divide dough: Divide the dough into 4 equal balls, approximately 3-3/8 ounces each.
  6. Roll out dough: Lightly flour a rolling pin and the work surface, then roll each ball into a 7-inch diameter thin round.
  7. Assemble the rolls: Spread 1 tablespoon marinara sauce in a strip down the center of the dough circle. Top with about 1/2 cup (2 oz) sliced grilled chicken, drizzle with 1 tablespoon more marinara sauce, and sprinkle 3 tablespoons shredded mozzarella cheese over the chicken.
  8. Fold dough: Fold the right side of the dough over the filling, then fold the left side over the right to enclose the filling completely.
  9. Apply egg wash and garnish: Brush the top of each roll with the beaten egg to give a golden color and sprinkle sesame seeds evenly over the top.
  10. Bake: Place the rolls on the prepared baking sheet and bake in the preheated oven for 20 minutes or until golden brown on top. Serve hot.

Notes

  • Use non-fat Greek yogurt for the dough to achieve the right texture; regular yogurt or ones with liquid may affect the dough consistency.
  • If using whole wheat flour, the dough may be slightly denser but still delicious.
  • Ensure the grilled chicken is sliced thinly to make rolling easier.
  • Optionally, you can substitute marinara with your favorite tomato sauce for variety.
  • Sesame seeds add a lovely crunch and flavor but can be omitted if allergic.
