Ingredients
Cabbage Steaks
- 1 medium head green cabbage (2½ pounds)
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon ground pepper
- ½ teaspoon onion powder
- ¼ teaspoon salt
Herb Butter
- 4 tablespoons unsalted butter, at room temperature
- ¼ cup finely chopped fresh tender herbs (such as basil, chives, dill and/or flat-leaf parsley)
- 3 medium cloves garlic, minced (1 teaspoon)
- 1 teaspoon grated lemon zest
- 1 teaspoon lemon juice
- 1 teaspoon lower-sodium Worcestershire sauce
- ¼ teaspoon crushed red pepper
- ⅛ teaspoon salt
Instructions
- Prepare Cabbage Steaks: Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with aluminum foil. Trim the stem off the cabbage and slice it vertically into four 1-inch-thick steaks. Arrange the cabbage steaks evenly on the prepared baking sheet.
- Season the Cabbage: Brush both sides of each steak with 2 tablespoons of extra-virgin olive oil. Sprinkle evenly with ½ teaspoon of ground pepper, ½ teaspoon of onion powder, and ¼ teaspoon of salt on both sides to build a balanced flavor profile.
- Roast the Cabbage: Place the baking sheet in the oven and roast the cabbage steaks for about 45 minutes, flipping them halfway through the cooking time. Roast until they become tender and develop a nice golden-brown color on both sides.
- Prepare Herb Butter: While the cabbage roasts, combine 4 tablespoons of room-temperature unsalted butter with ¼ cup finely chopped fresh herbs, 1 teaspoon minced garlic, 1 teaspoon grated lemon zest, 1 teaspoon lemon juice, 1 teaspoon lower-sodium Worcestershire sauce, ¼ teaspoon crushed red pepper, and ⅛ teaspoon salt in a medium bowl. Use an electric mixer on medium speed to beat the mixture for 30 seconds to 1 minute until fully combined and creamy.
- Finish and Serve: Once the cabbage steaks are roasted and tender, evenly spread the prepared herb butter over the hot cabbage steaks so the flavors melt and seep into the layers. Serve warm as a delicious vegetarian main or side dish.
