Ingredients
Chicken and Seasoning
- 2 boneless skinless chicken breasts (uncooked)
- 1 tbsp olive oil
- ½ tsp paprika
- ¼ tsp onion powder
- ½ tsp garlic powder
- 1 tsp oregano
- ⅛ tsp dried cayenne pepper
Wrap Ingredients
- 2 10 inch large burrito sized whole wheat tortillas
- ¼ cup plain 0% Greek yogurt
- ¼ cup low sugar BBQ sauce
- 2 cups coleslaw mix (broccoli slaw recommended)
- ¼ cup cilantro
- 1 green onion (finely sliced)
- 1 cup cheddar cheese (shredded, divided)
- 1 cup romaine lettuce (chopped)
- 6 slices of tomatoes
Instructions
- Preheat Grill or Grill Pan: Heat your grill or grill pan over medium-high heat to prepare for cooking the chicken evenly and thoroughly.
- Prepare Chicken: Flatten the chicken breasts to an even thickness to ensure uniform cooking. Coat them with olive oil and rub all the spices (paprika, onion powder, garlic powder, oregano, cayenne pepper) thoroughly so every piece is well seasoned.
- Grill Chicken: Place the seasoned chicken on the preheated grill or pan. Cook the chicken on each side until fully cooked through, checking that the internal temperature reaches at least 165°F to ensure safety and juiciness.
- Rest and Slice Chicken: Remove the chicken from heat and let it rest for 5 minutes to retain juices before slicing it into bite-sized pieces for the wrap filling.
- Mix Filling Ingredients: In a large bowl, combine the sliced chicken with Greek yogurt, BBQ sauce, coleslaw mix, chopped cilantro, finely sliced green onion, and half of the shredded cheddar cheese. Stir well to evenly mix all flavors.
- Assemble the Wraps: Lay out the whole wheat tortillas and place a layer of chopped romaine lettuce in the center of each. Add half of the chicken mixture on top, followed by three tomato slices. Sprinkle the remaining cheddar cheese over the top.
- Wrap and Serve: Fold in the sides of the tortilla, then bring the bottom flap up and roll tightly to form a secure wrap. Slice each wrap in half to serve and enjoy your flavorful BBQ grilled chicken wraps.
Notes
- For best results, use a meat thermometer to check that chicken reaches 165°F.
- You can substitute coleslaw mix with plain shredded cabbage if broccoli slaw is unavailable.
- Low sugar BBQ sauce keeps the wrap healthier without compromising flavor.
- Letting the chicken rest after grilling prevents dry meat and locks in juices.
- Whole wheat tortillas add extra fiber and nutrients compared to regular flour tortillas.
