Description

This simple and easy apple pie filling coffee cake combines the comforting flavors of apple pie filling with a moist white cake base. Perfect as a semi-homemade dessert or a delicious breakfast treat, it features a soft cake topped with apple fruit filling and finished with a sweet vanilla glaze.

Ingredients

For Cake:

  • 15.25 ounce box white cake mix
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup whole milk
  • 2 teaspoons apple pie spice
  • 1 teaspoon vanilla bean paste
  • 21 ounce can Lucky Leaf apple fruit filling

For Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla bean paste

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees F (175 degrees C) and spray a 9×13 inch baking dish with non-stick cooking spray to ensure the cake doesn’t stick to the pan.
  2. Mix Cake Batter: In the bowl of an electric mixer or a large mixing bowl, combine the white cake mix, eggs, sour cream, whole milk, apple pie spice, and vanilla bean paste. Mix on medium speed for about 2 minutes until well blended and smooth.
  3. Pour Batter: Pour the prepared cake batter evenly into the sprayed 9×13 baking dish, spreading it to the edges for uniform thickness.
  4. Add Apple Pie Filling: Spoon the 21-ounce can of Lucky Leaf apple fruit filling evenly over the top of the batter, distributing it gently but thoroughly.
  5. Bake the Cake: Place the baking dish in the preheated oven and bake for about 35 minutes, or until the cake is fully cooked, set, and a toothpick inserted into the center comes out clean.
  6. Prepare Glaze: While the cake is baking, whisk together the powdered sugar, milk, and vanilla bean paste in a bowl until smooth. Adjust consistency by adding more milk if too thick or more powdered sugar if too thin.
  7. Glaze and Cool: Once the cake is baked and slightly cooled, drizzle the glaze evenly over the top. Allow the cake to cool further before serving to let the glaze set.

Notes

  • Using a prepared cake mix simplifies the process and speeds up baking time.
  • Ensure the apple pie filling is evenly distributed for consistent flavor.
  • You can substitute vanilla bean paste with vanilla extract if unavailable.
  • For a thicker glaze, add less milk; for a thinner glaze, add more gradually.
  • This cake is best served slightly warm but is also delicious at room temperature.
  • Store leftovers in an airtight container and refrigerate for up to 3 days.
