Description

This homemade zucchini jam is a sweet and tangy preserve made from fresh shredded zucchini, sugar, lemon juice, and flavored Jell-O powder. It’s a simple, no-fuss recipe that transforms zucchini into a delightful spread that thickens as it cools, perfect for adding a unique twist to your toast and desserts.

Ingredients

Ingredients

  • 4 cups finely shredded zucchini (do not drain liquid out)
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 3 ounce box Jell-O (any flavor)

Instructions

  1. Combine Ingredients: In a stock pot over medium heat, add the finely shredded zucchini, granulated sugar, and lemon juice. Stir to mix the ingredients evenly.
  2. Simmer Mixture: Bring the mixture to a simmer, then reduce the heat to medium-low. Cook for 10 to 20 minutes, stirring occasionally, until the mixture has reduced by almost half. The exact cooking time depends on heat level and pan size.
  3. Incorporate Jell-O Powder: Add the Jell-O powder to the pot and stir thoroughly until it is fully dissolved and incorporated into the mixture. Remove from heat once combined.
  4. Cool Slightly: Allow the jam mixture to cool slightly in the pot. It will appear thin at this stage but will thicken upon cooling.
  5. Transfer to Jars: Pour the slightly cooled jam into jars, leaving a 1-inch gap at the top to accommodate expansion during freezing. Leave lids off while the jam cools completely to room temperature.
  6. Store Properly: Once cooled, secure the lids on the jars and store the zucchini jam in the refrigerator or freezer to maintain freshness.

Notes

  • Do not drain the shredded zucchini to retain natural moisture essential for the jam’s texture.
  • The cooking time may vary due to different stove types and cookware, so monitor the reduction closely.
  • Leaving the 1-inch headspace in jars is important to prevent overflow or jar breakage if freezing.
  • You can experiment with different Jell-O flavors to create unique taste variations.
  • Store the jam refrigerated for up to 2 weeks or freeze for longer preservation.
