- Mix wet ingredients: To the bowl of squeezed zucchini, add the 2 large eggs and 1/2 cup sliced green onions. Mix thoroughly to incorporate all ingredients evenly.
- Combine dry ingredients: In a small bowl, whisk together 3/4 cup all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon black pepper until well blended.
- Create batter: Pour the dry mixture into the bowl with zucchini and eggs, stirring until fully combined and a batter forms.
- Heat oil and cook fritters: Heat 2 tablespoons of olive oil in a pan over medium heat. Using a 1/4 cup scoop, place batter into the pan and flatten with a spatula to about a 3/4-inch thick patty.
