Delicious and crispy Zucchini Corn Fritters made with fresh grated zucchini, sweet corn, and cheddar cheese. These savory fritters are lightly seasoned and pan-fried to golden perfection, making an easy and tasty appetizer or side dish perfect for any meal.
Ingredients
Main Ingredients
- 2 cups grated zucchini (with excess moisture squeezed out)
- 1 tablespoon butter
- ¼ cup chopped onion
- 1½ cups fresh or frozen (thawed) corn
- 1 tablespoon minced garlic
- ½ cup all purpose flour
- ½ cup cornmeal
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ¼ teaspoon ground pepper
- ½ cup grated cheddar cheese
- 1 large egg
- ½ cup milk
- Oil for cooking (about ¼ inch deep in pan)
Instructions
- Prepare Zucchini: Grate the zucchini and spread it over a flat surface lined with paper towels. Place another layer of paper towels on top and press firmly to squeeze out excess moisture. Let it sit for 10 minutes and then set aside.
- Sauté Vegetables: Heat butter in a frying pan over medium heat. Add chopped onion, corn, and minced garlic and sauté for 3-5 minutes until tender and fragrant. Remove from heat.
- Mix Dry Ingredients: In a mixing bowl, whisk together all purpose flour, cornmeal, cornstarch, salt, and ground pepper until well combined.
- Combine Batter: To the dry mixture, add the prepared zucchini, sautéed vegetable mixture, grated cheddar cheese, egg, and milk. Stir thoroughly until a thick batter forms.
- Heat Oil: Wipe out the frying pan used earlier and heat oil to about ¼ inch depth over medium heat, ensuring it’s hot enough for frying.
- Fry Fritters: Using a ¼ cup measure, spoon the batter into the hot oil, cooking 3-4 fritters at a time. Fry each side for 3-4 minutes or until golden brown and crispy.
- Drain and Serve: Transfer cooked fritters onto paper towels to drain excess oil. Serve warm for the best taste and texture.
Notes
- Be sure to squeeze out as much moisture as possible from the grated zucchini to prevent soggy fritters.
- If fresh corn is unavailable, frozen corn works well after thawing.
- Use a non-stick frying pan for easier flipping and cleanup.
- Serve with sour cream, salsa, or your favorite dipping sauce.
- These fritters can be kept warm in a low oven if cooking in batches.
