Ingredients

For the Sponge Cake

  • 4 large eggs, separated

Instructions

  1. Prepare the Sponge Cake: Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper. Beat the egg whites in a clean bowl until soft peaks form, gradually adding half of the sugar (1/4 cup) until stiff peaks form. In a separate bowl, beat the egg yolks with the remaining sugar until pale and thick, then mix in vanilla extract. Sift together the flour, cocoa powder, baking powder, and salt, then gently fold this into the egg yolk mixture. Carefully fold in the beaten egg whites, preserving as much air as possible. Spread the batter evenly in the prepared pan and bake for 10–12 minutes, or until the cake springs back when gently pressed. Once baked, immediately roll the warm cake in a clean kitchen towel dusted with powdered sugar, starting from the short end, and let it cool completely inside the towel.
  2. Prepare the Filling: In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Once the cake is fully cooled, gently unroll it and spread the whipped cream evenly across the entire surface of the cake.
  3. Roll the Cake: Roll the cake tightly again from the short end with the whipped cream inside, then wrap it tightly in plastic wrap and refrigerate for 1 hour to help it set firmly.
  4. Make the Chocolate Buttercream: Beat the softened butter until smooth and creamy. Gradually add powdered sugar, cocoa powder, milk or cream, and vanilla extract, beating until the mixture is fluffy and smooth. Use a spatula to spread the chocolate buttercream evenly over the chilled rolled cake and texture the surface with a fork to mimic tree bark.
  5. Assemble the Yule Log: Unwrap the chilled cake and place it on a serving platter. Fully frost the cake with the chocolate buttercream, continuing to create bark-like lines for a realistic log appearance. Decorate with fresh cranberries, edible mushrooms, rosemary sprigs, and other seasonal garnishes as desired.
  6. Final Touch: Lightly dust the entire cake with powdered sugar to resemble fresh snow, enhancing the festive look before serving.
  7. Presentation: Serve your Yule Log on a rustic wooden board to create a cozy and elegant holiday dessert presentation.
