Ingredients

Dough

  • 2 cups sifted all-purpose flour
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

  • 2 tablespoons ice cold water
  • 3/4 cups (1 1/2 sticks) cold unsalted butter, cut into pieces or grated
  • 1 egg + 1 teaspoon water (for egg wash)

Filling

  • 3 to 4 cups assorted chopped vegetables (such as onions, peppers, cauliflower, squash, broccoli, brussels sprouts)
  • Olive oil for drizzling
  • Kosher salt and pepper, to taste
  • 4 ounces goat cheese, crumbled
  • Balsamic glaze for drizzling (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees F to prepare for roasting vegetables and baking the galette.
  2. Prepare the Dough: In a food processor, combine flour, dried basil, oregano, and salt by pulsing until mixed. In a small bowl, whisk together the egg, white vinegar, and ice cold water. Add the cold butter pieces to the flour mixture and pulse until small coarse crumbs remain. Gradually sprinkle the egg mixture over the flour and pulse until the dough comes together.
  3. Chill the Dough: Remove the dough from the processor, shape with hands into a ball, wrap tightly in plastic wrap, and refrigerate for 30 minutes to allow the dough to rest and firm up.
