Ingredients

Quinoa Base

  • 1 tablespoon unsalted butter
  • 1 cup quinoa

  • 1 tablespoon vanilla extract
  • ½ teaspoon cinnamon (plus extra for topping)
  • Pinch ground nutmeg
  • Pinch of allspice
  • Kosher salt

Toppings

  • 2 blood oranges, segmented
  • ½ cup roasted pistachios
  • ¼ cup pomegranate arils


Instructions

  1. Toast the Quinoa: Heat the butter in a saucepan over medium heat. Add the quinoa and stir continuously for a few minutes, allowing the quinoa to toast and develop a nutty aroma.
  2. Cook Quinoa in Spiced Coconut Milk: Pour in the canned coconut milk and water into the saucepan. Stir in the vanilla extract, cinnamon, ground nutmeg, allspice, and a generous pinch of kosher salt. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Simmer gently until the liquid is absorbed, about 15 minutes. Remove from heat and use a fork to fluff the quinoa gently.
  3. Assemble the Breakfast Bowls: Spoon about ½ cup of the cooked quinoa into serving bowls. Drizzle with additional coconut milk, or your preferred milk or cream for added creaminess. Top each bowl with segmented blood oranges, roasted pistachios, and pomegranate arils. Finish with a sprinkle of cinnamon on top for extra warmth and flavor.
