Ingredients

Raspberry Layer

  • 2 cups fresh raspberries
  • 2 tablespoons sugar
  • Juice of 1 lemon

White Chocolate Mousse

  • 1 (4.4 oz) white chocolate bar, chopped (125g)
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar (optional)

Garnish

  • Fresh raspberries
  • White chocolate shavings


Instructions

  1. Prepare the Raspberry Layer: In a saucepan, combine the fresh raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture slightly thickens. Remove from heat, let cool, and strain to remove seeds for a smooth sauce.
  2. Make the White Chocolate Mousse: Melt the chopped white chocolate gently by placing it in a saucepan over low heat or in a heatproof bowl in the microwave for about 60 seconds, stirring occasionally. Allow the melted chocolate to cool slightly to avoid curdling when combined.
  3. Whip the Cream: In a separate bowl, whip the heavy cream, vanilla extract, and optional sugar until stiff peaks form, ensuring a light and airy texture for the mousse.
  4. Combine Chocolate and Cream: Carefully fold the melted white chocolate into the whipped cream until well combined, making sure not to deflate the cream for a fluffy mousse.
  5. Assemble the Mousse: Spoon a generous layer of the cooled raspberry sauce into the bottom of each serving glass or dish.
  6. Add White Chocolate Mousse: Spoon or pipe the white chocolate mousse over the raspberry layer, filling the glasses. Repeat layers if glasses are tall.
