  • 1 teaspoon vanilla extract
  • 240 g milk (dairy or non-dairy)
  • 1 tablespoon oil (for melting chocolate)

  • 170 g raspberries (fresh or frozen)
  • 200 g white chocolate (roughly chopped)


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper and set it aside to ensure easy removal after baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this dry mixture aside for later use.
  3. Cream Butter and Sugar: In a large mixing bowl, use an electric hand mixer to beat the softened butter until it becomes very creamy and pale in color. Add the granulated sugar and continue beating until the mixture is fluffy and light, about 3 minutes.
  4. Add Eggs and Vanilla: Incorporate eggs one at a time into the butter and sugar mixture, mixing well after each addition. Then add the vanilla extract and mix until fully combined.
