Crust and Raspberry Sauce
- 1 store-bought pre-made oreo crust (graham cracker crust works too; save the lid)
- 1 Tbsp granulated sugar
- 1 1/2 tsp cornstarch
- 1/3 cup cold water
- 1 1/2 cups fresh or frozen raspberries
Cheesecake Filling
- 12 oz cream cheese (1 1/2 packages), softened
- 1/3 cup granulated sugar
- 1 egg
- 1 egg white
- 1 tsp vanilla extract
- 1 1/2 tsp lemon juice
- 6 oz white chocolate, chopped or 1 cup white chocolate chips
- 1/4 cup heavy whipping cream
Instructions
- Prepare Raspberry Sauce: Preheat oven to 325°F (163°C). In a small saucepan, whisk together 1 Tbsp granulated sugar and cornstarch until well blended. Stir in cold water and add raspberries.
- Cook Raspberry Sauce: Cook the mixture over medium heat, whisking frequently until it reaches a boil. Allow it to gently boil for about 5 minutes, whisking constantly, and reduce heat slightly if necessary to prevent splattering, until the sauce thickens.
- Strain Raspberry Sauce: Remove from heat and force the sauce through a fine mesh strainer into a bowl to remove seeds. Set aside.
- Make Cheesecake Base: In a large mixing bowl, beat softened cream cheese and 1/3 cup granulated sugar with an electric mixer until fluffy, about 1 minute. Mix in the egg and egg white, then add vanilla extract and lemon juice. Set aside.
- Melt White Chocolate: Melt the white chocolate with heavy whipping cream in a double boiler until smooth. Alternatively, melt in microwave-safe bowl at 50% power in 30-second intervals, stirring after each until melted and smooth.
- Combine Chocolate and Cheese Mixtures: Add melted white chocolate mixture to the cream cheese mixture and blend until smooth and fully combined.
- Assemble Cheesecake: Pour 2/3 cup of cheesecake mixture into the oreo crust and spread evenly over the bottom. Drizzle or spoon 2 Tbsp raspberry sauce over it.
- Layer the Cheesecake: Slowly ladle the remaining cheesecake mixture over the drizzled raspberry sauce to cover it completely, taking care not to let the sauce show through.
- Swirl Inside Layer: Use a toothpick or knife to gently swirl the cheesecake inside layer, being careful not to break the surface; jiggle the pan carefully to even out the top.
- Decorate Surface: Using a clean medicine syringe filled with raspberry sauce, pipe small circles in a swirl pattern over the cheesecake surface.
- Create Swirl Design: Starting from the center circle, drag a toothpick or sharp knife through the center of each swirl without lifting until all circles form a heart-shaped swirl pattern.
- Bake Cheesecake: Bake for 40 minutes at 325°F (163°C). Then turn off the oven and leave the cheesecake inside for an additional 5 minutes. Remove from oven and allow to cool.
- Chill and Set Cheesecake: Cover the cheesecake with the saved lid and refrigerate for about 5 hours until fully set.
- Serve: Top cheesecake slices with remaining raspberry sauce and optional sweetened whipped cream for extra indulgence before serving.
