  • 1 cup corn kernels
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2/3 cup sour cream


Instructions

  1. Heat the oil and sauté onions: In a large pot over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the diced onions and cook for about 4 minutes until they are softened and translucent.
  2. Add garlic: Add 1 tablespoon minced garlic to the pot with the onions and sauté for an additional 30 seconds until fragrant, taking care to avoid burning the garlic.
  3. Add remaining ingredients and simmer: Pour in 2 cups of chicken broth, add the drained beans, 2 cans of mild green chiles (with juices), diced chicken, corn kernels, chili powder, cumin, oregano, salt, and black pepper. Stir everything to combine well. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer gently for 10 minutes, or until the chicken is cooked through and flavors have melded.
  4. Incorporate the sour cream safely: In a small bowl, add 2/3 cup sour cream. Ladle about 1/2 cup of the hot chili soup into the sour cream, stirring to temper it and prevent curdling. Then pour this mixture back into the pot and stir until fully blended.
