Description

A hearty and flavorful vegetarian dish featuring tender white butter beans and sautéed mushrooms simmered in rich marinara sauce, topped with melted mozzarella cheese. Perfect as a comforting main course served with garlic bread.

Ingredients

Vegetables and Aromatics

  • 8 oz. mushrooms
  • 2 cloves garlic

Pantry Items

  • 2 Tbsp olive oil
  • 2 cups marinara sauce (or more to your liking)
  • 2 15-oz. cans butter beans, drained and rinsed
  • 1/2 tsp dried basil
  • 1 pinch crushed red pepper
  • 1 pinch salt and pepper

Dairy

  • 4 oz. mozzarella cheese, shredded

Instructions

  1. Preheat and Sauté Mushrooms: Preheat the oven to 400ºF. Wash and slice the mushrooms. In a deep skillet, add the mushrooms, olive oil, and a pinch of salt and pepper. Sauté over medium heat until the mushrooms have wilted and all moisture has evaporated from the skillet.
  2. Add Garlic: While the mushrooms sauté, mince the garlic. Add the garlic to the skillet and continue sautéing for 2 more minutes to release its flavors.
  3. Add Beans and Marinara: Drain and rinse the butter beans. Add the beans, marinara sauce, dried basil, and crushed red pepper to the skillet. Stir to combine and let the mixture heat through, stirring occasionally.
  4. Top with Mozzarella and Bake: Shred the mozzarella cheese while the mixture is heating. Spread the shredded mozzarella evenly over the skillet contents. Cover the skillet with foil and transfer it to the preheated oven. Bake for 5-7 minutes or until the cheese has melted.
  5. Broil to Brown Cheese: Remove the foil. Switch the oven to broil and place the skillet under the broiler for a few minutes to brown the cheese. Watch carefully to prevent burning. Serve hot, ideally with garlic bread for dipping.

Notes

  • Use any marinara sauce you prefer or homemade for best flavor.
  • Adjust the amount of crushed red pepper to your spice tolerance.
  • Butter beans can be substituted with other white beans like cannellini or great northern beans.
  • If you don’t have an oven-safe skillet, transfer the bean mixture to a baking dish before adding cheese and baking.
  • Garlic bread is a great accompaniment for dipping into the cheesy sauce.
