Ingredients

Salad

  • 6-8 cups watermelon, cubed (seedless, about half of a large watermelon)

  • ⅓ cup feta cheese, crumbled
  • ¼ cup fresh basil, chopped

Dressing

  • ¼ cup watermelon juice (reserved from slicing watermelon)
  • ¼ cup fresh lime juice (about 2 limes squeezed, plus more for garnish)
  • ½ teaspoon fresh cracked black pepper
  • ¼ teaspoon salt
  • ½ teaspoon tajin seasoning (optional, more for garnish if desired)
  • 1 tablespoon honey
  • 1 tablespoon whole grain mustard (more as needed)


Instructions

  1. Prepare Watermelon: Slice the watermelon into small cubes and discard the rind. Place the cubed watermelon in a large bowl. Reserve ¼ cup of watermelon juice in a small bowl for the dressing.
  2. Add Cucumber, Basil, and Feta: Cube the cucumbers and finely chop the basil. Add both to the large bowl containing the watermelon cubes. Then, add the crumbled feta cheese.
  3. Make the Dressing: In a bowl or jar, combine the reserved watermelon juice with fresh lime juice, honey, whole grain mustard, salt, cracked pepper, and tajin seasoning (if using). Whisk the ingredients together thoroughly. Taste and adjust the sweetness or mustard level as desired.
  4. Toss and Serve: Pour the dressing over the watermelon and cucumber mixture and gently toss to combine. Garnish the salad with extra lime slices and a dash of tajin seasoning if desired. Serve immediately for best freshness.
