Description
A refreshing and vibrant Watermelon Cucumber Salad combining juicy watermelon cubes, crisp cucumber, tangy feta, and a fragrant herb vinaigrette, perfect for a light summer dish or a side to your favorite meals.
Ingredients
Salad
- 6 cups cubed watermelon (use seedless watermelon if possible)
- 1 English cucumber (approximately 3 cups, sliced then quartered)
- 1/2 cup red onion (sliced thin)
- 1 cup crumbled feta cheese
Dressing
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon chopped fresh mint
- 2 tablespoons fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Prep the Ingredients: Slice the watermelon into small cubes. Slice the cucumber, then quarter the slices. Thinly slice the red onion and crumble the feta cheese so all ingredients are ready to assemble.
- Make the Dressing: In a medium bowl, whisk together the olive oil, balsamic vinegar, chopped mint, fresh basil, salt, and ground black pepper until well combined and emulsified.
- Assemble the Salad: Add the cubed watermelon, quartered cucumber, thinly sliced red onion, and crumbled feta cheese into a mixing bowl. Pour the prepared dressing over the salad ingredients and gently toss everything together to evenly coat without bruising the watermelon.

- For added crunch, you can sprinkle toasted pine nuts or walnuts on top.
- Make the salad just before serving to keep it fresh and crisp.
