Cake

  • 1 cup club soda
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 (3.4-oz.) package pistachio instant pudding and pie filling mix (preferably Jell-O brand), divided
  • Salt, a heaping 1/4 teaspoon
  • 3/4 cup sweetened flaked coconut, divided (1/2 cup for batter, remaining for topping)
  • 3/4 cup finely chopped unsalted pistachios, divided (1/2 cup for batter, remaining for topping)

Frosting

  • 2 cups heavy whipping cream
  • 3/4 cup confectioners’ sugar
  • 3 tablespoons pistachio instant pudding and pie filling mix (from the second package)
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and position the oven rack in the middle. Lightly grease a 9 x 13-inch (23 x 33 cm) cake pan with cooking spray to ensure the cake does not stick.
  2. Mix Cake Batter: In an electric mixer fitted with the paddle attachment, combine the white cake mix, club soda, vegetable oil, eggs, one package of pistachio pudding mix, and a heaping 1/4 teaspoon salt. Beat on medium speed for about 2 minutes until the ingredients are evenly blended and the mixture is light. Scrape down the sides as needed.
  3. Add Coconut and Pistachios: Stir in 1/2 cup of the sweetened flaked coconut and 1/2 cup of the chopped pistachios into the batter to add texture and flavor.
  4. Bake the Cake: Pour the batter into the prepared cake pan and smooth it into an even layer. Bake in the preheated oven for 25 to 30 minutes until the cake top is lightly golden and a toothpick inserted in the center comes out clean.
