Description

A quick and flavorful Watercress Stir Fry that highlights the fresh, peppery taste of watercress tossed in a savory blend of oyster sauce, soy sauce, and garlic. Ready in just 15 minutes, this simple Chinese-style side dish is perfect for adding a nutritious green to your meal.

Ingredients

Main Ingredients

  • 1 bunch (1 lb / 450 g) watercress
  • 3 cloves garlic, sliced

Seasonings and Sauces

  • 1 teaspoon oyster sauce (or vegetarian oyster sauce)
  • 1 teaspoon soy sauce
  • 1/8 teaspoon sugar
  • Salt to taste (optional)

Oils

  • 1 tablespoon peanut oil (or vegetable oil)

Instructions

  1. Soak Watercress: Soak the watercress in cold tap water for 2 to 3 minutes to remove any dirt or impurities. Once soaked, drain thoroughly and set aside.
  2. Prepare Sauce Mixture: In a small bowl, mix together the oyster sauce and soy sauce until well combined.
  3. Heat Oil and Garlic: Heat the peanut oil in a wok or large skillet over medium-high heat until hot. Add the sliced garlic and stir a few times to release its fragrance but be careful not to burn it.
  4. Cook Watercress: Add the drained watercress to the pan. Stir and toss a few times, ensuring the greens are well coated with the sizzling oil.
  5. Add Sauce and Season: Pour in the oyster sauce and soy sauce mixture evenly over the watercress. Sprinkle the sugar across the dish. Continue stirring as you cook to incorporate the flavors evenly and gently wilt the watercress.
  6. Finish and Serve: When the watercress has turned tender yet still retains a slight crispness, transfer it to a plate. Turn the heat to low, taste the sauce, and add a small pinch of salt if needed. Serve immediately as a hot side dish.

Notes

  • Vegetarian option: Use vegetarian oyster sauce made from mushrooms instead of traditional oyster sauce.
  • Do not overcook the watercress to maintain its crisp texture and vibrant green color.
  • Use peanut oil or vegetable oil that tolerate high heat for best stir-fry results.
  • Adjust salt to taste after cooking as oyster and soy sauces are already salty.
  • Rinse watercress thoroughly to remove any grit or sand before cooking.
