Chicken and Spices

Walnut and Pomegranate Mixture

  • 2 cups shelled walnut halves and pieces
  • ½ cup pomegranate molasses

  • 1 tbsp balsamic vinegar
  • Juice of 1 lemon
  • 4 cloves garlic (finely grated)

Instructions

  3. Brown the Chicken: Heat a large pot or Dutch oven over medium-high heat. Add the canola oil and brown the chicken pieces in 2-3 batches, cooking about 10 minutes per batch until golden on all sides. Transfer browned chicken to a bowl.
  4. Clean the Cooking Pot: Remove the pot from heat and allow the oil to cool. Wipe out any burnt spices and residue from the pot to prepare for the next steps.
  5. Combine Chicken and Walnuts: Return the browned chicken and toasted walnuts to the cleaned pot, distributing them evenly.
  6. Make the Marinade: In a separate bowl, whisk together pomegranate molasses, pomegranate juice, honey, balsamic vinegar, lemon juice, grated garlic, and saffron threads if using. This creates a flavorful glaze for the chicken.
