Description

A healthy and refreshing Very Berry Chia Pudding that combines the natural sweetness of fresh or frozen berries with creamy non-dairy milk and nutrient-rich chia seeds. Perfect as a make-ahead breakfast or a light dessert, this vegan and gluten-free pudding is sweetened with maple syrup and flavored with vanilla extract for a naturally delicious treat.

Ingredients

Chia Pudding Base

  • 2 cups non-dairy milk (almond or coconut recommended)
  • 1/2 cup + 2 tbsp chia seeds
  • 2-3 tbsp pure maple syrup, to taste
  • 1/2 tsp vanilla extract

Berries

  • 1/2 cup strawberries, fresh or frozen
  • 1/2 cup blueberries, fresh or frozen
  • 1/2 cup raspberries, fresh or frozen

Instructions

  1. Combine Ingredients: In a large bowl or mason jar, thoroughly mix together the non-dairy milk, chia seeds, maple syrup, vanilla extract, and all the berries until evenly distributed.
  2. Refrigerate: Cover the mixture and place it in the refrigerator overnight or for at least 8 hours to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
  3. Serve: Give the pudding a good stir before serving. Enjoy it cold, garnished with extra berries if desired.

Notes

  • Use any non-dairy milk of your choice; almond or coconut milk adds extra creaminess and flavor.
  • Adjust the amount of maple syrup to suit your preferred sweetness level.
  • Fresh or frozen berries work equally well; no need to thaw frozen berries before mixing.
  • Make sure to allow enough refrigeration time for the chia seeds to fully gel and achieve the desired pudding texture.
  • This recipe is naturally vegan and gluten-free.
