- 500 ml (~ 2 cups) vegetable stock
- 1/2 tsp dried oregano
- Black pepper, to taste
- 2 bay leaves
- 1/2 tsp English mustard
White Sauce
- 2 tbsp butter
- 2 tbsp plain flour
- 250 ml (~ 1 cup) milk
Instructions
- Cook the Vegetables: Heat the oil in a large saucepan over medium heat. Add the diced onion and chopped broccoli, sautéing for a few minutes until the onion softens slightly.
- Add Frozen Vegetables and Garlic: Stir in the frozen vegetable mix and minced garlic. Continue cooking for 5-10 minutes, stirring regularly until the vegetables are almost fully cooked.
- Add Stock and Seasonings: Pour in the vegetable stock, then add dried oregano, bay leaves, English mustard, and a good pinch of black pepper. Stir to combine.
- Prepare the White Sauce: In a separate pan, melt the butter over low heat. Stir in the flour and cook for about a minute, then gradually add the milk, whisking continuously after each addition to form a smooth sauce.
- Combine White Sauce and Soup: Pour the white sauce into the vegetable soup, stirring thoroughly. Simmer until vegetables reach your preferred tenderness and the soup thickens to your liking.
- Final Touches: Remove the bay leaves. Optionally, use a hand blender to blend all or part of the soup for a smoother texture. Serve the soup hot, ideally alongside crusty bread.
