Description

These Vegetarian Sliders feature juicy marinated portobello mushrooms and sharp white cheddar cheese, layered on soft King’s Hawaiian rolls. Deliciously savory and perfectly toasted, they make an ideal appetizer or party snack that combines bold flavors with a tender bite.

Ingredients

Marinade and Mushrooms

  • 12 ounces portobello mushrooms, sliced
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1 teaspoon butter

Assembly

  • 1 12-count package King’s Hawaiian Rolls
  • 2 cups Cabot White Sharp Cheddar Cheese, shredded

Instructions

  1. Marinate Mushrooms: In a storage bag or shallow dish, combine balsamic vinegar, soy sauce, olive oil, dried rosemary, and garlic powder to create the marinade. Add the sliced portobello mushrooms and allow them to marinate for 15 minutes up to one hour, enabling the mushrooms to soak in deep flavors.
  2. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the assembled sliders later.
  3. Cook Mushrooms: Melt 1 teaspoon of butter in a large pan over medium heat. Add the marinated portobello mushrooms along with the marinade into the pan, stirring and cooking until the mushrooms are tender, about 5 to 8 minutes. Remove mushrooms using tongs to avoid extra sauce transfer.
  4. Prepare Rolls: Use a sharp serrated bread knife to carefully slice the King’s Hawaiian Rolls in half horizontally, keeping the rolls connected as a whole piece. Place the cut rolls on a baking sheet.
  5. Assemble Layers: Spread half of the shredded white sharp cheddar cheese evenly over the bottom half of the rolls. Next, layer the cooked portobello mushrooms on top of the cheese, avoiding excess sauce. Then, cover the mushrooms with the remaining shredded cheese.
  6. Top and Bake: Place the top half of the rolls over the layered filling. Cover the whole assembly with foil and bake in the preheated oven for 15 to 20 minutes, or until the cheese melts and the buns are lightly toasted.
  7. Serve: Remove from oven and slice the slider roll into 12 individual sandwiches by following the natural lines of the rolls. Serve warm and enjoy.

Notes

  • Marinating the mushrooms longer (up to an hour) deepens the flavor.
  • Be careful not to transfer too much marinade with mushrooms to avoid soggy sliders.
  • The sharp white cheddar adds a nice tang that complements the earthy mushrooms.
  • Using King’s Hawaiian rolls gives a sweet contrast to the savory filling.
  • You can prepare sliders ahead of time and bake just before serving.
