Description

This Vegan Salted Caramel Apple Galette is a rustic, free-form tart featuring a flaky vegan butter crust filled with spiced apple slices coated in rich vegan salted caramel sauce. Perfectly baked to a golden finish and topped with a hint of sea salt and optional vegan vanilla ice cream, this dessert blends sweet and salty flavors for a comforting and elegant treat.

Ingredients

Pastry Dough

  • 1¼ cup all purpose flour
  • ½ cup vegan butter (cold and cubed)
  • ¼ tsp salt
  • 1 tsp granulated sugar
  • 3-4 tbsp ice cold water

Filling

  • 1 large red apple, sliced (with skin)
  • 1 tbsp all purpose flour
  • ¼ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 2 tsp lemon juice
  • ⅛ tsp coarse or flaked sea salt (plus more for topping)
  • ½ cup vegan salted caramel sauce (plus more for topping)

Finishing Touches

  • 1 tbsp non dairy milk (for brushing)
  • 1-2 tbsp raw sugar (optional)
  • Vegan vanilla ice cream (to serve, optional)

Instructions

  1. Make the pastry dough: In a large bowl, whisk together the flour, salt, and sugar. Add the cold, cubed vegan butter. Using a pastry blender or two forks, cut the butter into the flour mixture until the texture resembles coarse oatmeal.
  2. Knead the dough: Gradually add ice cold water, mixing with a fork. Once combined, use your hands to knead the dough into a ball. Shape it into a thick disk, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour or up to 1 week.
  3. Prepare the filling: Toss the sliced apples with lemon juice to prevent browning. Add flour, cinnamon, nutmeg, and ginger, mixing until evenly coated. Stir in the vegan salted caramel sauce until the apple slices are well combined with the spices and caramel.
  4. Preheat the oven and roll out dough: Preheat your oven to 375ºF (190ºC). Place a large piece of parchment paper on a clean surface. Remove the chilled dough from the refrigerator and roll it out on the parchment paper into a roughly 10-inch circle about ½ cm thick, ensuring even thickness.
  5. Assemble the galette: Arrange the caramel apple filling in the center of the rolled-out dough, leaving about a 2-inch border all around. Carefully fold the edges of the dough up and over the filling, pleating as needed to form a rustic crust.
  6. Brush and prepare for baking: Lightly brush the crust with non-dairy milk and sprinkle raw sugar on top for extra crunch and sweetness if desired.
  7. Bake: Transfer the parchment paper with the assembled galette onto a baking tray. Bake in the preheated oven for 30-35 minutes until the crust is golden and the caramel filling is bubbling gently.
  8. Cool and serve: Remove from oven and allow the galette to cool for at least 10 minutes before slicing. Optionally, top with vegan vanilla ice cream, drizzle more vegan salted caramel sauce, and sprinkle a pinch of coarse sea salt before serving.

Notes

  • The pastry dough can be made in advance and refrigerated for up to one week for convenience.
  • If raw sugar is unavailable, granulated sugar can be used for sprinkling on the crust.
  • To maintain a flaky crust, ensure the vegan butter is very cold before cutting into the flour.
  • Use a tart apple variety like Honeycrisp or Granny Smith for the best balance of tartness and sweetness.
