This Vegan Nut Roast is an easy, high-protein plant-based dish perfect for a hearty meal. Made from mixed nuts, sunflower seeds, fresh vegetables, and fragrant herbs, this loaf is baked to golden perfection. Ideal for special occasions or everyday dinners, it pairs wonderfully with classic vegan sides like gravy, roast potatoes, and steamed vegetables.
Ingredients
Nut Mixture
- 1½ tbsp ground flaxseed
- 4 tbsp water
- 3 cups mixed nuts (walnuts, almonds, cashews and/or peanuts) – about 300g/10.5oz
- ½ cup sunflower seeds – about 70g/2.5oz
- 1 tbsp dried mixed herbs
- 1 tbsp dried sage (finely ground)
- ½ tsp black pepper
- ½ cup gluten free flour (60g/2oz) – use regular flour if gluten isn’t an issue
Vegetables & Seasonings
- 1 medium onion
- 1 medium carrot
- 1 medium stick of celery
- 1½ tbsp olive oil
- 1 tbsp soy sauce or tamari
Instructions
- Preheat and Prepare Tin: Preheat your oven to 175°C (350°F) and line a loaf tin with parchment paper. Brush a little olive oil on any exposed parts of the tin to prevent the nut roast from sticking.
- Make Flax Egg: In a small bowl, mix the ground flaxseed with water and set aside to thicken into a gloopy mixture known as a flax egg, which acts as a binder.
- Process Nuts and Seeds: Add the mixed nuts and sunflower seeds to a food processor and blend until the mixture resembles thick breadcrumbs.
- Combine Dry Ingredients: Transfer the nut and seed mixture into a large mixing bowl. Stir in the dried mixed herbs, ground sage, black pepper, and gluten free flour until combined.
- Chop Vegetables: Roughly chop the onion, carrot, and celery into four large chunks each. Pulse them in the food processor until finely chopped.
- Sauté Vegetables: Heat olive oil in a frying pan or skillet over medium heat. Add the chopped vegetables and cook gently for 8-10 minutes, until softened and fragrant.
- Mix All Ingredients: Transfer the cooked vegetables into the bowl with the nut mixture. Add the flax egg and soy sauce. Mix everything together thoroughly and season with salt if needed.
- Prepare for Baking: Spoon the nut roast mixture into the prepared loaf tin. Press down firmly with a spatula to compact the mixture and flatten the surface.
- Bake the Nut Roast: Bake in the preheated oven for 35-40 minutes until the top is golden brown. Remove from the tin and either serve immediately or cool on a wire rack. It can be enjoyed hot or cold.
- Serve: Slice the nut roast and serve with vegan gravy, roast potatoes, maple glazed carrots, stuffing, and steamed vegetables for a complete meal.

- Use a gluten free flour to keep this recipe gluten free or swap for regular flour if gluten is not a concern.
- The flax egg acts as a vegan binder; ensure it thickens properly before using for best results.
