Ingredients
Dry Ingredients
- 1 cup pastry flour (or all-purpose flour)
- 3/4 teaspoon baking soda
- 4 tablespoons cocoa powder
- 1/4 teaspoon salt
- 1/2 cup sugar
Wet Ingredients
- 1/2 cup almond milk (unsweetened)
- 1 teaspoon vanilla extract
- 6 tablespoons vegetable oil
Glaze
- 1 1/4 cups powdered sugar
- 1/4 teaspoon salt
- 4 tablespoons vegan butter (melted)
- 1 tablespoon water
- 1/2 teaspoon rose extract (optional)
Instructions
- Preheat Oven: Preheat your oven to 175°C (350°F). Lightly spray a 6-cavity regular-sized donut tray with cooking spray and set it aside.
- Mix Dry Ingredients: Sieve pastry flour, baking soda, cocoa powder, salt, and sugar into a large mixing bowl to ensure there are no lumps and the ingredients are evenly combined.
- Combine Wet Ingredients: Add the almond milk, vanilla extract, and vegetable oil to the dry ingredients. Whisk the mixture thoroughly until it forms a thick chocolate batter.
- Fill Donut Tray: Dispense the batter evenly into the prepared donut tray cavities. Using a piping bag can make this process quicker and neater.
- Bake Donuts: Place the tray in the oven and bake for 15 to 18 minutes, or until the donuts spring back when touched and a skewer inserted in the center comes out clean.
- Cool Donuts: Remove the donuts from the oven and let them rest in the tray for 10 to 15 minutes. Once slightly cooled, carefully remove the donuts from the tray and let them cool completely on a wire rack.
- Prepare Glaze: In a bowl, mix the powdered sugar, salt, and rose extract (if using) with the melted vegan butter and water. Whisk until smooth. Adjust the consistency by adding more water if too thick, or more powdered sugar if too runny.
- Glaze Donuts: Dip the cooled donuts into the glaze bowl to coat them evenly. For a thicker glaze, dip twice. Place the glazed donuts on a cooling tray and allow the glaze to set before serving.
Notes
- Using pastry flour gives a lighter texture, but all-purpose flour can be used as a substitute.
- The rose extract in the glaze is optional but adds a delightful floral note.
- Ensure the donuts are completely cooled before glazing to achieve the best glaze adherence.
- Use a piping bag or a ziplock bag with a corner cut off for easier batter dispensing into the donut tray.
- Store leftover donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
