Description

This delicious Cast Iron Cookie is a warm, gooey dessert perfect for sharing. Made with plant-based butter and peanut butter, it offers a rich, satisfying flavor with pockets of melty chocolate chips. Baked in a cast iron skillet, this treat boasts a crispy edge and soft center, ideal for topping with vegan vanilla ice cream for an indulgent finish.

Ingredients

Wet Ingredients

  • 6 tbsp plant based butter, room temperature
  • ¼ cup unsweetened applesauce (egg replacement)
  • 1¼ tsp vanilla extract
  • ½ cup peanut butter (natural preferred)

Dry Ingredients

  • ½ cup white granulated sugar
  • ⅓ cup light brown sugar, packed
  • 1 cup all purpose flour
  • ½ tsp baking soda
  • ½ tsp salt

Other

  • ¾ cup semisweet chocolate chips
  • 3 scoops vegan vanilla ice cream (optional, for serving)

Instructions

  1. Preheat the Oven: Set your oven to 350ºF (175ºC) to prepare for baking the cookie skillet.
  2. Cream Butter and Sugars: In a stand mixer or large bowl, mix the room temperature plant based butter with both the brown and white sugars until fully combined and creamy. If you don’t have a mixer, mix vigorously by hand.
  3. Add Wet Ingredients: Stir in the unsweetened applesauce and vanilla extract until evenly incorporated.
  4. Incorporate Dry Ingredients and Chocolate Chips: Add the all purpose flour, baking soda, salt, and chocolate chips to the mixture. Mix thoroughly, ensuring all ingredients are evenly distributed.
  5. Add Peanut Butter: Gently fold in the peanut butter with just a few stirs to preserve pockets of peanut butter in the dough without overmixing.
  6. Prepare the Skillet: Grease a 10-inch cast iron skillet or oven-safe pan to prevent sticking.
  7. Spread the Dough: Evenly distribute the cookie dough across the skillet using a spatula, smoothing the top for uniform baking. Optionally, sprinkle extra chocolate chips on top for a decorative touch.
  8. Bake: Place the skillet in the preheated oven and bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool and Serve: Allow the cookie to cool in the skillet for 5 to 10 minutes before serving. Top with vegan vanilla ice cream if desired for a delicious, melty contrast.

Notes

  • Using natural peanut butter helps create delicious pockets of peanut butter flavor.
  • Do not overmix after adding peanut butter to maintain texture.
  • Letting the cookie cool slightly before serving helps it set properly.
  • Optional vegan ice cream topping adds a creamy, cold contrast to the warm cookie.
  • Ensure the skillet is well-greased to prevent sticking.
