Instructions
- Prepare the Graham Crackers: Follow Alton Brown’s graham cracker recipe to make the dough. Roll out the dough and use small and medium heart-shaped cookie cutters alternately to cut out shapes. Bake the cutouts in a preheated oven for about 15 minutes, watching carefully until the edges begin to darken. Remove from the oven and allow to cool completely.
- Make the Marshmallows: Prepare marshmallow batter following Alton Brown’s recipe. Divide the batter into two smaller pans. Leave half plain, and to the other half, add a few drops of red food coloring and 1 teaspoon strawberry extract, mixing gently until combined. Let the marshmallows set completely.
- Cut the Marshmallows: Once set, dust your heart-shaped cookie cutters with a mix of cornstarch and confectioners’ sugar to prevent sticking. Use these cutters to cut heart shapes from the marshmallow slabs.
- Melt the Chocolates: Place bittersweet and white chocolate in separate heatproof bowls. Set each bowl over a pot of simmering water (double boiler method) and gently melt the chocolate until smooth, stirring occasionally.
- Assemble the S’mores: Lay wax paper on a baking sheet. Sandwich a heart-shaped marshmallow between two graham cracker hearts. Dip half of each assembled s’more into melted chocolate, then place on the wax paper. Immediately sprinkle with colorful sprinkles if desired.
- Set the Chocolate: Place the baking sheet in the refrigerator for about 15-20 minutes or until the chocolate hardens completely.
