Description

Delicious and healthy Turkey Zucchini Boats stuffed with a flavorful ground turkey and marinara mixture, topped with parmesan cheese, and baked to perfection. This low-carb, protein-packed dish is perfect for a weeknight dinner that is both satisfying and nutritious.

Ingredients

Vegetables

  • 4 medium zucchini squash
  • ½ medium onion, chopped

Protein & Dairy

  • 1 lb ground lean turkey
  • 2-3 tablespoons parmesan cheese (optional)

Sauce

  • 1 ½ cup marinara sauce

Instructions

  1. Preheat Oven: Preheat your oven to 400° F (200° C) to prepare for baking the zucchini boats.
  2. Sauté Onion and Turkey: Place a large nonstick skillet over medium-high heat. Add the chopped onion and ground lean turkey. Season with salt and pepper to taste. Cook for 8 to 10 minutes, breaking up the turkey with a wooden spoon or spatula until fully browned and the onion is softened.
  3. Add Marinara Sauce: Stir in the marinara sauce to the cooked turkey mixture, ensuring the meat is fully coated. Continue cooking for an additional 2-3 minutes to combine flavors.
  4. Prepare Zucchini Boats: While the turkey cooks, slice each zucchini in half lengthwise. Use a spoon to scoop out the seeds and the center flesh from each half, leaving about a ¼-inch thick shell to create the ‘boats’.
  5. Fill Zucchini: Arrange the zucchini halves cut-side up in a 9×13-inch baking dish. Spoon the turkey and marinara filling evenly into each zucchini boat. If using, sprinkle parmesan cheese over the top of each filled boat.
  6. Bake: Cover the baking dish with foil and bake for 20 to 30 minutes until the zucchini are tender, the filling is heated through, and the parmesan is melted. Remove from oven and serve warm immediately.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • For a low-fat option, skip the parmesan cheese or use a reduced-fat version.
  • Make sure to scoop out enough zucchini flesh to create a good cavity for the filling without puncturing the skin.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Serve with a side salad or steamed veggies for a complete meal.
