Ingredients

Beef Steaks

  • 2 boneless beef steaks (sirloin or ribeye)

Onion & Toppings

  • 34 medium yellow onions, thinly sliced
  • 2 tbsp all-purpose flour
  • Oil (for frying and cooking), about 2 tbsp plus extra as needed
  • 2 tbsp butter

Liquids & Seasoning

  • 1 cup (240ml) beef broth
  • 1/2 cup (120ml) red wine or 2 tbsp red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Prep the Onions: Thinly slice all the onions. Set half of them aside to be used later for making crispy fried onions as the topping.
  2. Make Crispy Onions: Toss half of the sliced onions with 1 tablespoon of flour until coated. Heat oil in a small pan over medium heat, then fry the floured onions until golden brown and crispy. Drain them on paper towels and set aside for serving.
  3. Cook the Steaks: Season both sides of the beef steaks with salt and pepper, then lightly dust them with flour. Heat 1 tablespoon of oil and 1 tablespoon of butter in a skillet over medium-high heat. Sear the steaks for 2 to 3 minutes on each side until browned. Remove the steaks from the skillet and keep warm.
  4. Make the Onion Gravy: In the same skillet, add the remaining sliced onions and cook over medium heat for 10 to 15 minutes, stirring occasionally, until they are soft and golden brown. Add the red wine or red wine vinegar and allow it to reduce by half. Then stir in the beef broth and bring to a gentle simmer.
  5. Finish Cooking: Return the seared steaks to the skillet with the onion gravy. Simmer gently for 5 to 10 minutes until the steak is cooked to desired doneness and the flavors meld. Taste the sauce and season with additional salt and black pepper as needed.
  6. Serve: Plate the steaks, spoon the rich onion gravy over them, and top with the crispy fried onions prepared earlier. Serve immediately for best flavor and texture.
