Description
Crispy and delicate traditional Italian fried zucchini blossoms, coated in a light batter and pan-fried to golden perfection. A classic appetizer that highlights the fresh floral flavor of courgette flowers with a simple, crispy coating. Perfect served warm as a savory treat.
Ingredients
Batter
- ⅓ cup flour
- ¼ tsp salt
- 3 oz water (sparkling water optional)
- 1 tsp milk (omit for vegan or lactose intolerance)
For Frying
- 10 zucchini blossoms (courgette/squash flowers)
- Olive oil (as needed for frying)
Instructions
- Clean the Blossoms: Remove the pistil and stem from each zucchini blossom. Rinse them gently under cold water to remove any dirt or bugs, then dry carefully on paper towels. It’s okay if some flowers tear or open during this process.
- Make the Batter: In a bowl, combine the flour and salt. Add the milk first, then gradually add the water, whisking continuously until the batter reaches a thick but smooth consistency. Beat well for an additional 1-2 minutes to ensure the batter is fully mixed and smooth. Let the batter rest for at least 5 minutes.
- Preheat Oil: Heat olive oil in a frying pan over medium-high heat. The oil should be hot but not smoking; you can test this by dropping a small amount of batter into the oil to see if it sizzles immediately.
- Dip the Flowers: Dip each zucchini blossom into the batter, fully coating it evenly.
- Fry the Flowers: Place the battered flowers gently into the hot oil. Pan-fry, turning carefully to cook evenly on all sides. Fry until the batter is golden and crisp, approximately 2-3 minutes per side. Avoid overcrowding the pan.
- Drain and Serve: Remove the fried blossoms and place them on a paper towel lined plate to absorb excess oil. Serve immediately when still hot or warm for the best texture and flavor.
Notes
- You can omit milk for a vegan or lactose-free version; water alone will work for the batter.
- Sparkling water can be used instead of still water to make the batter lighter and crispier.
- Be gentle when handling the zucchini blossoms as they are delicate and can tear easily.
- Do not deep fry; pan frying with a moderate amount of olive oil is the traditional method and yields the best texture.
- Best served fresh and warm to maintain crispiness.
