Description

This recipe features two classic Irish breads: Traditional Irish Soda Bread and Spotted Dog. Both breads are quick and easy to prepare, using simple ingredients like flour, buttermilk, and baking soda as a leavening agent. The Irish Soda Bread is a dense, slightly tangy loaf marked with a cross on top, baked at high heat. The Spotted Dog includes raisins or currants and butter for a richer, sweeter taste, with an egg wash finish for a shiny crust. These breads embody authentic Irish baking, perfect for a comforting snack or accompaniment to meals.

Ingredients

Irish Soda Bread

  • 3.5 cups All Purpose Flour (a soft wheat flour such as White Lily)
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 2 cups Buttermilk
  • Extra flour for work area and dusting

Spotted Dog

  • 4.5 cups All Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 tsp Baking Soda (heaping)
  • 1 tsp Salt
  • 4 tbsp Cold Butter, diced into cubes
  • 2 cups Buttermilk
  • 2 Eggs
  • 1 cup Raisins or Currants
  • Extra flour for work surface and dusting (about 1/2 cup)
  • 1 tsp Water (for egg wash)

Instructions

  1. Prepare Irish Soda Bread: Preheat your oven to 450°F (232°C). In a large mixing bowl, combine the flour, salt, and baking soda. Pour in the buttermilk and mix gently using a spatula until just combined into a sticky dough.
  2. Shape the Soda Bread: Turn the dough out onto a well-floured surface. Avoid overworking the dough—just a few turns to form it into a thick round. Dust the surface with extra flour as needed since the dough will be sticky.
  3. Score and Bake Soda Bread: Place the shaped dough on a parchment-lined baking sheet. Using a sharp knife, cut a cross into the top of the loaf. Bake in the oven for 10 minutes at 450°F, then reduce the oven temperature to 375°F (190°C) and bake for an additional 15 to 20 minutes until golden and cooked through.
  4. Prepare Spotted Dog Dough: Preheat the oven to 400°F. Combine flour, sugar, baking soda, and salt in a mixing bowl. Add the cold diced butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs. Stir in the raisins.
  5. Add Wet Ingredients to Spotted Dog: Add the buttermilk and one egg to the flour mixture. Use a hand mixer to combine until the batter is wet and sticky.
  6. Shape Spotted Dog Dough: Turn the dough onto a floured work surface. Dust the dough liberally with flour and work it lightly until it becomes less sticky and can be shaped into a round loaf.
  7. Score and Egg Wash Spotted Dog: Place the shaped dough on a parchment-lined baking sheet. Cut a cross on top. In a small bowl, whisk the remaining egg with 1 teaspoon of water. Brush this egg wash over the bread for a glossy finish.
  8. Bake Spotted Dog: Bake the bread for 15 minutes at 400°F, then increase oven temperature to 475°F and continue baking for 25 to 30 minutes until a deep golden color is reached and the loaf sounds hollow when tapped.

Notes

  • Do not overwork the dough to keep the bread tender and avoid toughness.
  • The cross cut on top of the bread helps it cook evenly and is a traditional Irish hallmark.
  • Use fresh baking soda and buttermilk for best rising action and flavor.
  • Extra flour is needed to manage the sticky doughs during shaping.
  • Egg wash on the Spotted Dog gives a shiny, attractive crust.
  • Allow breads to cool before slicing to prevent crumbling.
