Ingredients
Tofu Tacos
- 15 to 16 oz extra firm tofu
- 2 Tbsp olive oil, divided
- 1 1/2 Tbsp soy sauce
- 2 tsp minced garlic
- 1 tsp chili powder
- 1 tsp ancho chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper (optional for heat)
- Salt and black pepper, to taste
- 1 1/2 Tbsp fresh lime juice
- 8 (6-inch) corn tortillas, warmed
Toppings (Optional)
- Thinly shredded cabbage (green or red)
- Avocado slices or guacamole
- Roma tomatoes, diced or pico de gallo
- Chopped cilantro
- Vegan cheddar cheese or dairy cheese
- Vegan sour cream or dairy sour cream
- Mexican hot sauce
Instructions
- Drain the tofu: Wrap tofu in a few paper towels and place on a plate. Place a heavy pan or cast iron skillet on top to press the tofu for 10 minutes to remove excess moisture.
- Prepare the tofu: Once drained, crumble the tofu into small, even bits suitable for taco filling.
- Mix the marinade: In a large mixing bowl, whisk together 1 tablespoon olive oil, soy sauce, minced garlic, chili powder, ancho chili powder, ground cumin, smoked paprika, coriander, and cayenne pepper to form a flavorful spice mixture.
- Coat the tofu: Add the crumbled tofu to the spice mixture, tossing well to ensure all pieces are evenly coated with the marinade.
- Cook the tofu: Heat the remaining 1 tablespoon of olive oil in a 12-inch non-stick skillet over medium-high heat. Add the tofu and cook for 7 to 9 minutes, tossing occasionally so it browns nicely and develops a crispy texture.
- Finish with lime and seasoning: Remove the skillet from heat, drizzle fresh lime juice over the tofu, and season with salt and black pepper to taste. Toss to combine thoroughly.
- Assemble tacos: Serve the cooked tofu over warmed 6-inch corn tortillas and add your favorite toppings such as shredded cabbage, avocado or guacamole, diced tomatoes or pico de gallo, chopped cilantro, vegan cheddar cheese, vegan sour cream, and a drizzle of Mexican hot sauce as desired.
