Description

These Toasted Cashew Coconut Bars are a delicious and nutritious snack, combining the rich flavors of toasted cashews, shredded coconut, and naturally sweet medjool dates. With a hint of vanilla and smooth almond butter binding the mix, these no-bake bars offer a wholesome treat that’s perfect for a quick energy boost or a healthy dessert option.

Ingredients

Dry Ingredients

  • ¾ cup raw cashews
  • ½ cup unsweetened shredded coconut
  • 2 cups pitted medjool dates
  • ¼ tsp sea salt

Wet Ingredients

  • ¼ cup smooth almond butter (natural variety)
  • 1 tsp vanilla extract

Instructions

  1. Toast Cashews: Preheat your oven to 350°F (175°C). Spread raw cashews evenly on a baking sheet and toast them for 5 minutes to enhance their flavor. Allow them to cool on the pan for about 10 minutes to prevent any further cooking and to improve blending texture.
  2. Process Dry Ingredients: In a food processor, combine the toasted cashews, pitted medjool dates, shredded coconut, and sea salt. Pulse until the mixture becomes crumbly, ensuring all ingredients are finely chopped but not fully pureed.
  3. Add Wet Ingredients and Combine: Add the smooth almond butter and vanilla extract to the crumbly mixture in the food processor. Process until the ingredients start to clump together and form a sticky, cohesive dough that will hold shape when pressed.
  4. Press Mixture into Pan: Line a loaf pan with parchment paper for easy removal. Transfer the sticky mixture into the pan and use the back of a flat spatula to press it down firmly and evenly, creating a compact base.
  5. Chill and Slice: Place the pan in the freezer for 15-20 minutes to firm up the bars. Once set, remove from the pan using the parchment paper, and slice into bars or squares as desired. Store them in an airtight container in the refrigerator or freezer for optimal freshness.

Notes

  • You can substitute almond butter with any natural nut butter of your choice for variation in flavor.
  • Keep the bars refrigerated for longer shelf life and best texture.
  • Medjool dates are preferred for their softness and natural sweetness but can be swapped with other soft dates if unavailable.
  • Toast the cashews carefully to avoid burning, which can cause a bitter taste.
  • These bars are naturally sweetened with dates, so no added sugar is necessary.
