Ingredients
Brownie Base
- 113 g unsalted butter

Espresso Soak
- 2 shots of espresso or strong instant coffee
Mascarpone Cream
- 250 g mascarpone cheese, room temperature
- 240 ml heavy cream
- 50 g sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 tbsp espresso powder

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Prepare an 8 or 9-inch square baking tin by lining it with parchment paper to prevent sticking and make removal easier.
- Melt Chocolate and Butter: Place the chopped dark chocolate and butter in a heatproof bowl. Microwave in 30-second intervals, stirring between each, until the mixture is fully melted and smooth.
- Add Sugars: Mix both the brown sugar and granulated sugar into the melted chocolate butter mixture until well combined.
- Incorporate Eggs and Vanilla: Stir in the vanilla extract. Add the eggs one at a time, whisking well after each addition to fully integrate them into the batter.
- Add Dry Ingredients: Sift the all-purpose flour and a pinch of salt into the mixture. Gently fold or whisk until just combined to avoid overmixing.
- Bake Brownies: Pour the brownie batter into your prepared tin, smoothing the top with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
