Ingredients
Vegetables
- 4 mini cucumbers, sliced
- 10 mini sweet peppers, sliced
Dressing
- ½ tablespoon Everything But the Bagel Seasoning
- 1 teaspoon Chili crisp
- ¼ cup extra virgin olive oil
- ¼ cup unseasoned rice vinegar
- 1 ½ tablespoons tamari or soy sauce
- 1 ½ tablespoons maple syrup
- 2 teaspoons sesame oil
- 1 large clove garlic
- 1 inch knob fresh ginger
- Pinch of black pepper
Instructions
- Make the dressing: Add the garlic clove, fresh ginger knob, extra virgin olive oil, rice vinegar, tamari or soy sauce, maple syrup, sesame oil, black pepper, and 1 teaspoon of chili crisp into a blender. Blend everything until the dressing is smooth and creamy. Set this flavorful dressing aside.
- Prepare the vegetables: Slice the mini cucumbers and mini sweet peppers evenly and place them into a large bowl to ensure even coating of the dressing.
- Combine and toss: Pour about ¼ cup of the prepared dressing over the cucumbers and bell peppers. Add ½ tablespoon Everything But the Bagel Seasoning and 1 teaspoon chili crisp on top. Toss everything gently but thoroughly to coat all the vegetables evenly. Taste the salad and adjust seasoning, dressing, or chili crisp as desired for preferred spice and flavor balance.
Notes
- Use tamari for a gluten-free option instead of regular soy sauce.
- Adjust the amount of chili crisp to control the heat level to your preference.
- This salad is best served fresh but can be chilled for up to a day in the refrigerator.
- Feel free to add fresh herbs like cilantro or green onions for extra flavor.
