Chicken
- 2 small chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon poultry seasoning (or salt, pepper, garlic powder mix)
Bread and Garlic Butter
- 1 Italian style loaf
- 1 stick unsalted butter (melted)
- 1 tablespoon minced garlic
- 1 tablespoon chopped parsley
- 1 teaspoon crushed red pepper flakes
Alfredo Sauce
- 1/2 stick unsalted butter
- 1 tablespoon minced garlic
- 1/2 cup heavy cream
- 1/4 cup shredded parmesan cheese
- 1 tablespoon chopped parsley
Toppings
- 2 tablespoons olive oil (for chicken cooking)
- 2 tablespoons minced garlic (total for recipe)
- 2 tablespoons chopped parsley (total for recipe)
- 1/4 cup shredded parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon crushed red pepper flakes
Instructions
- Prepare and Cook Chicken: Cut the chicken breasts into ½ inch pieces and transfer to a bowl. Drizzle with 1 tablespoon of olive oil and season with 1 tablespoon of poultry seasoning or your salt, pepper, garlic powder mix. Heat a pan over medium heat and cook the chicken pieces until they are golden brown and fully cooked through, about 5-7 minutes.
- Prepare the Bread and Garlic Butter: Slice your Italian loaf lengthwise in half. In a small bowl, combine 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Spread this garlic butter mixture evenly on both halves of the bread.
- Toast the Bread: Preheat your oven to 350°F (175°C). Place the garlic buttered bread halves on a baking sheet and toast in the oven for 5-10 minutes. Check at 5 minutes and continue toasting until the bread reaches your desired crispness.
- Make the Alfredo Sauce: Using the same pan you cooked the chicken in, reduce heat to medium-low and add 1/2 stick of butter. Let it melt, then stir in 1 tablespoon minced garlic. Cook for 2-3 minutes until fragrant. Lower the heat to low, add 1/2 cup heavy cream, 1/4 cup shredded parmesan cheese, and 1 tablespoon chopped parsley. Simmer gently, stirring continuously until the sauce thickens slightly, about 3-5 minutes. Remove from heat.
- Assemble the Garlic Bread: Spread half of the prepared Alfredo sauce over the toasted bread halves. Layer the cooked chicken pieces evenly across the sauce, then sprinkle with 1/2 cup shredded mozzarella cheese. Top with the remaining Alfredo sauce.
- Bake to Finish: Place the assembled bread back into the preheated 350°F oven for about 5 minutes or until the mozzarella cheese is fully melted and bubbly.
- Serve: Remove from oven and slice the bread into 2-3 inch pieces. Serve warm and enjoy the irresistible cheesy garlic chicken alfredo bread!
