Caramel Drizzle

  • 2- ounces store-bought soft caramels (60-70g, about 8-10 caramels, e.g., Werthers)
  • 2 teaspoons cream or half-and-half
  • Flaky sea salt for finishing (optional)


Instructions

  1. Prepare Brown Butter: Place ½ cup butter in a large microwave-safe bowl and cover tightly with plastic wrap, making 3-4 small slits for venting. Microwave on high in 4-minute increments, checking after each until butter turns a golden brown color, typically about 6 minutes for a 900-watt microwave. Carefully remove and let cool for 10 minutes.
  2. Preheat and Prep Pan: Center a rack in the oven and preheat to 350˚F (177˚C). Generously spray a 9 or 10-inch tart pan with removable bottom using baking spray. Line the bottom with a circle of parchment paper and place the pan on a sheet pan for stability.
  3. Make Cookie Dough: To the cooled browned butter, whisk in 2 tablespoons water, ½ cup granulated sugar, ⅓ cup brown sugar, ¼ cup well-stirred almond butter, and 2 teaspoons vanilla extract until combined. Add 1 large egg and 1 egg yolk, stirring thoroughly.
  4. Add Dry Ingredients: Stir in 1 teaspoon baking powder, ¼ teaspoon baking soda, and ¾ teaspoon kosher salt. Gradually add 1 ⅓ cups all-purpose flour and stir just until no flour streaks remain; do not overmix.

  9. Finish Tart: Drizzle the warm caramel over the top of the tart in small pools. If caramel thickens, reheat briefly. Optionally, sprinkle lightly with flaky sea salt to enhance flavor.
