Description

A fresh and vibrant veggie sandwich featuring creamy scallion-spiked cream cheese and a colorful array of crisp vegetables, perfect for a quick, healthy meal.

Ingredients

Scallion Cream Cheese

  • 2 oz. cream cheese
  • 1 green onion, sliced
  • 1/2 tsp lemon juice
  • 1/8 tsp garlic powder
  • 1/8 tsp dried dill
  • 1 pinch salt

Sandwich

  • 2 slices hearty bread
  • 6 slices cucumber
  • 2 slices tomato
  • 1 handful spinach
  • 1 carrot, shredded
  • 1/2 red bell pepper, sliced
  • 1 handful alfalfa sprouts
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Prepare the scallion cream cheese: In a small bowl, whip together the cream cheese, sliced green onion, lemon juice, garlic powder, dried dill, and a pinch of salt using a fork until well combined and smooth.
  2. Toast the bread: Lightly toast the two slices of hearty bread to your preference to add a slight crunch and warmth.
  3. Assemble the sandwich: Spread the prepared scallion cream cheese evenly over one side of each slice of toasted bread.
  4. Add the vegetables: Layer the cucumber slices, tomato slices, spinach, shredded carrot, red bell pepper slices, and alfalfa sprouts on top of one slice of the bread. Sprinkle a pinch of salt and pepper over the vegetables to enhance the flavor.
  5. Complete and serve: Place the second slice of bread, cream cheese side down, over the piled vegetables, slice the sandwich in half, and enjoy immediately for the best texture and freshness.

Notes

  • Use hearty bread like whole wheat, multigrain, or sourdough for best results.
  • Feel free to substitute or add your favorite sandwich vegetables such as avocado, radishes, or sprouts.
  • For a vegan version, substitute cream cheese with a plant-based alternative.
  • Light toasting the bread helps prevent sogginess from the vegetables.
  • This sandwich is best eaten fresh but can be wrapped tightly and refrigerated for up to 4 hours.
