Instructions

  2. Heat the skillet: Place a large cast iron skillet over medium heat and add the olive oil along with two tablespoons of ghee or butter. Let the fats melt and warm through.
  3. Cook the potatoes: Once the ghee is melted, add the cubed potatoes to the skillet. Sprinkle minced garlic, dried thyme, dried oregano, ½ teaspoon sea salt, and ¼ teaspoon ground black pepper evenly over the potatoes. Cook undisturbed for 2-3 minutes before stirring to let them start browning.
  4. Brown and tenderize the potatoes: Stir the potatoes frequently every 1-2 minutes to prevent sticking and ensure even cooking.
