Description

These soft chocolate chip cookies are perfectly chewy and buttery, with a delightful combination of chocolate chips and chunks. Baked to a light golden puff and cooled to create a dense, melt-in-your-mouth texture, these cookies stay soft for days and are easy to make with simple ingredients and straightforward steps.

Ingredients

Wet Ingredients

  • 8 tablespoons of salted butter
  • 1/2 cup white sugar (preferably raw cane sugar)
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Dry Ingredients

  • 1 1/2 cups all purpose flour (6.75 ounces)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (plus a little extra)

Mix-ins

  • 3/4 cup chocolate chips (combination of chocolate chips and chunks recommended)

Instructions

  1. Preheat and melt butter: Preheat your oven to 350°F (175°C). Microwave the salted butter for about 40 seconds until just barely melted. It should be mostly liquid but not hot to the touch.
  2. Cream butter and sugars: Using a stand mixer or electric beaters, beat the melted butter with the white and brown sugars until creamy. Add the vanilla extract and the egg, then beat on low speed just until combined, about 10 to 15 seconds. Avoid overbeating to prevent stiff cookies.
  3. Combine dry ingredients and form dough: Add the all-purpose flour, baking soda, and salt to the wet mixture. Mix until crumbly pieces form. Use your hands to press the crumbs together into a cohesive dough ball that is not too wet or too dry.
  4. Add chocolate chips: Incorporate the chocolate chips and chunks evenly into the dough by hand.
  5. Shape and bake cookies: Roll the dough into 12 large balls (or 9 extra-large ones) and place them spaced on a cookie sheet. Bake for 9 to 11 minutes until the cookies puff up, look dry on top, and are just barely golden—do not overbake.
  6. Cool to set texture: Let the cookies cool on the pan for at least 30 minutes. As they cool, they will sink slightly and develop a dense, buttery, soft texture. Store in an airtight container to maintain softness.

Notes

  • Do not overbeat the egg to keep the cookies tender and soft.
  • Remove cookies from the oven while still pale and puffy; they will finish baking as they cool.
  • Cookies stay soft for several days when stored in an airtight container and can also be frozen.
  • A combination of chocolate chips and chunks adds texture variation.
