Easy to prepare and baked to golden perfection, these cookies stay fresh for up to a week.
Ingredients
Cookie Dough
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 3/4 cup (150g) packed light or dark brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
Dry Ingredients
- 2 cups (250g) all-purpose flour (spooned & leveled)
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Add-ins
- 1 and 1/4 cup (225g) semi-sweet chocolate chips
Instructions
- Mix wet ingredients: In a large bowl, use a handheld or stand mixer fitted with a paddle attachment to beat softened butter, brown sugar, and granulated sugar together on medium speed until creamy and combined, about 2 minutes. Add the egg and vanilla extract, then beat again. Scrape down the sides and bottom of the bowl to ensure even mixing.
- Combine dry ingredients and mix: In a separate bowl, whisk together all-purpose flour, cornstarch, baking soda, and salt. Add the dry ingredients to the wet mixture and beat on low speed until just combined, resulting in a slightly thick dough. Gently fold in the semi-sweet chocolate chips on low speed.
- Chill the dough: Cover the cookie dough tightly and refrigerate for at least 1 hour and up to 3–4 days. Chilling is essential to develop flavor and ensure the perfect soft cookie texture.
- Prepare for baking: Remove the dough from the refrigerator and let it sit at room temperature for 10 minutes. Meanwhile, preheat your oven to 350°F (177°C) and line two large baking sheets with parchment paper or silicone baking mats.
- Shape the cookies: Once the dough has softened slightly but is still firm, use about 1.5 tablespoons of dough per cookie (a medium cookie scoop works well) and roll them into balls. Place the cookies 3 inches apart on the prepared baking sheets to allow room for spreading.
- Bake the cookies: Bake the cookies for 11 to 12 minutes, or until the edges are barely golden. The centers will look very soft when removed from the oven. Cool the cookies on the baking sheets for 5 minutes. If cookies are too puffy, gently press them down with the back of a spoon to encourage slight deflation. Optionally, press additional chocolate chips on top while warm for presentation.
- Cool completely and store: Transfer cookies to a cooling rack to cool completely. Store cookies in an airtight container at room temperature, where they remain fresh for up to one week.
Notes
- Chilling the dough is crucial to achieve soft, thick cookies; do not skip this step.
- For room temperature ingredients, leave the egg and butter out for 30–60 minutes before starting.
- If your cookies spread too much while baking, try chilling the shaped dough balls for 15 minutes before baking.
- Use parchment paper or silicone mats to prevent sticking and promote even baking.
- The baking time may vary slightly depending on your oven; watch for barely golden edges as your cue.
