Description

This Slow-Cooker Chicken Tacos recipe offers tender, flavorful chicken that cooks low and slow for the perfect taco filling. Combined with fresh lime juice, chili powder, corn, and chunky salsa, these tacos are easy to assemble and customizable with your favorite toppings. Ideal for a simple weeknight meal or casual gathering, the slow cooker does most of the work, delivering juicy, shredded chicken that soaks up all the delicious juices.

Ingredients

Chicken Tacos Filling

  • 1-1/2 pounds boneless skinless chicken breast halves
  • 3 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 cup fresh or frozen corn, thawed
  • 1 cup chunky salsa

Taco Assembly

  • 12 fat-free flour tortillas (6 inches), warmed
  • Optional toppings: sour cream, pickled onions, shredded lettuce, sliced avocado, shredded cheddar or Cotija cheese, lime wedges

Instructions

  1. Slow-cook the chicken: Place the chicken breast halves into a 3-quart slow cooker. Pour lime juice over the chicken and sprinkle with chili powder evenly. Cover and cook on low heat for 5 to 6 hours until the chicken becomes tender and easily shredded.
  2. Shred the chicken: Carefully remove the cooked chicken from the slow cooker once cool enough to handle. Use two forks to shred the meat into bite-sized pieces. Return the shredded chicken to the slow cooker, keeping the juices, which will keep the meat moist and flavorful.
  3. Season the chicken filling: Add the thawed corn and chunky salsa directly into the slow cooker with the shredded chicken. Stir gently to combine and cover again. Cook on low for about 30 more minutes until the mixture is heated through.
  4. Build the tacos: Warm the flour tortillas either in a microwave for a few seconds or on a hot skillet to make them pliable. Spoon the chicken filling evenly onto each tortilla. Add your preferred optional toppings such as sour cream, pickled onions, shredded lettuce, sliced avocado, shredded cheese, and a squeeze of lime wedge to finish your delicious tacos.

Notes

  • Do not drain the slow cooker juices after cooking the chicken; these juices help keep the chicken moist when shredded.
  • Warming tortillas before assembling will prevent them from cracking and make folding easier.
  • You can customize the toppings to suit your taste preferences or dietary needs.
  • Leftover chicken filling can be refrigerated for up to 3 days and reheated gently.
