Description

This quick and easy sautéed asparagus and mushrooms recipe combines tender asparagus with flavorful mushrooms, garlic, and simple seasonings for a perfect side dish or light meal. Ready in just 13 minutes, it’s a healthy, delicious way to enjoy fresh vegetables with minimal fuss.

Ingredients

Vegetables

  • 2 bunches asparagus, woody ends removed and cut into smaller pieces
  • 8 oz. button or cremini mushrooms

Seasonings and Oil

  • 1 tablespoon vegetable oil (olive oil or avocado oil can also be used)
  • 2 cloves garlic, minced
  • ½ teaspoon kosher salt (adjust to taste)
  • ¼ teaspoon black pepper

Instructions

  1. Saute garlic: Heat the vegetable oil in a large 12-inch skillet over medium heat. Add the minced garlic and sauté for about one minute until fragrant, being careful not to burn it.
  2. Saute vegetables: Add the cut asparagus and mushrooms to the skillet. Cook while stirring often until the mushrooms release their juices and the asparagus becomes tender, approximately 5 to 7 minutes.
  3. Finish and serve: Season the sautéed vegetables with kosher salt and black pepper to taste. Serve immediately while warm as a side dish or light entrée.

Notes

  • You can substitute the vegetable oil with olive oil or avocado oil for added flavor and health benefits.
  • Trim the woody ends of asparagus thoroughly to avoid toughness.
  • If you prefer a stronger garlic flavor, you can add an extra clove.
  • For a vegan and gluten-free dish, ensure your kosher salt and other ingredients meet those dietary standards.
  • Asparagus cooks quickly, so avoid overcooking to retain its crispness and vibrant color.
